More of a home-coming than a new arrival!

Chateau Yering once more opens its culinary arms to Mark Ebbels

Born and bred in the Yarra Valley, with his very childhood spent surrounded by vegetables grown on the family farm, Mark’s passion for local fare is undeniable, and the skills and imagination that take it from harvest to table are borne of fond memories of hearty, home cooked, country-style meals created with his mother and grandmother, and intuitively allowing the season to dictate what graces the dinner plate!


Chateau Yering was an early part of nurturing Mark’s culinary passion, working under Matt Macartney, and readily gaining a reputation for his dedication and attention to detail.


He followed that with a year as Chef De Partie at Melbourne’s Mezzo Bar and Grill, before venturing overseas. Continuing his culinary education in England, Mark’s talents landed him an opportunity at Heston Blumenthal’s famed restaurant ‘The Fat Duck’ in Bray, spending two years there as a chef in the development kitchen. It was here his natural ingenuity and creative skills were honed, using traditional as well as obscure ingredients to create unique culinary experiences in true Heston style.


From Berkshire, Mark moved to Singapore, in the role of Chef De Cuisine at Bacchanalia, becoming an integral member of the team that was awarded a coveted Michelin star in 2016.


Home beckoned in recent years, so it was back to the Valley, still delighting folk with his depth of knowledge, creativity and experience, and passion for elevating his cherished home produce to plates of Chefs Hat magnificence!


The wheel has now turned full-circle, as here in 2022, Mark returns to Chateau Yering, beginning an exciting new journey as Executive Chef, where his menu shall reflect the seasonality and individuality of both local and Australian ingredients, sourced particularly from both sustainable and ethical farming practices.
